Açai bowls have become a classic go-to – I created this recipe because I wanted something creamy, but that wasn’t full of the hidden nasties which are sometimes in Açai bowls you find in cafés. Watch out for those with fruit juice concentrate – this one is sweetened by the bananas and berries, and the almond butter makes it so much creamier and satiating!
Ingredients
- 1 packet of unsweetened acai, frozen – Amazonia Co is my fav
- 1 frozen banana
- 1/2 cup frozen berries (berries of choice)
- 1/2 tsp. cinnamon
- pinch of sea salt
- 1 heaped tbsp. almond butter
- 1 tsp. stevia powder or raw honey
- 1/2 cup coconut milk
- Optional to add 1 serving of vegan/whey protein powder.
Method
- In a blender, add all the listed ingredients.
- Once the mixture is thick and smooth, pour into a bowl and add your favourite toppings to serve.
Serving suggestions: Extra banana slices, blueberries, strawberries, shredded coconut, mixed seeds, mixed nuts or gluten-free granola.
